My first experience with cooking was at the age of 6. I was helping my mother to prepare a meringue for dessert. She placed some eggs in a bowl and asked me to beat them, first the whites and then the yolks. As the consistency changed and the colors became silky, she then asked me to turn the bowl upside-down. The meringue held still on the bowl and I found that sensational! It was the catalyst that stimulated my interest in cooking and since then I have been involved with developing recipes for my own restaurant and partaking in sensory evaluations for a beverage company. Most recently, I have been dedicating my time and passion to a new venture, namely, Pamonha.
My passion for food is to unveil its origins, to learn about its traditions, its history, and to bring back the home-cooking styles that once surrounded our daily lives. The focus is to return to the times of simplicity rather than the science of molecular cuisine and complexity of food components.
So, how did I find my passion for Pamonhas?
It was by chance and by necessity. I had been living in Australia for 20 years and since then I had missed those afternoons, sitting on a balcony, having a corn milky parcel, steaming hot and seeing the vapor of the heat released and hovering on top of the Pamonhas. Let’s not forget also the perfect accompaniment of a black cup of coffee just waiting there for me to enjoy.
For over 20 years I had been saying that someone should do this, so last year (2015) I took a stance and decided to pursue it. The idea was there with family recipes at my fingertips and an immense desire to share this amazing journey with you all.

My name is Silvana Calil and I am the founder of the Corn Factory Pamonharia. The journey of my life has been filled with experiences and discoveries that have led me to create and do what I love, and that is cooking.
I will be imparting all the secrets of the delicacies passed on to me from my mother; secrets that once upon a time were part of my childhood. Furthermore, I will be sharing the experience of time and knowledge from the years of operating my own restaurant.
I have observed that our lifestyles and customs have transitioned considerably over the years, and with that also has the art of culinary cuisine. People nowadays appear to be more conscientious of holistic attributes like the use of natural ingredients and organic, biodynamic farming practices. The food industry is constantly transforming and creating products with alternative and new tastes. To me, food has an incredible power to evoke distant memories and reminders of loved ones, special moments, kitchen disasters and triumphs.
Every dish tells a story. The food I enjoyed as a kid might not have been gastronomical delights, but they have been embedded in my mind like Dad’s bedtime story. Nowadays when I taste or smell that same food I am instantly transported back to my mother’s kitchen.
However, there is always something that pushes us back to those flavors of our infancy.
